Course outline and Schedule:
Day 1 :
Meeting at Old Fashion Country Butcher.
Address: 335 S 5th St, Santa Paula, CA 93060
09:00-1000 Shoot the animal and gut it.
10:00-11:00 Skin the animal and quarter it out.
11:00-12:00 Go over the tools and equipment for caring for the meat, prepare and cool the meat.
12:30- End of Day-1: optinal FREE shooting at the public range for the rest of the day!
Day 2 :
All day at California Tactical Academy
08:00-08:30 Sign in, Instructor introduction, safety brief, range rules.
08:30-10:30 Different ways of cooking and preparing meats. Discussion of below topics.
Many new hunters are not sure what to do “after the shot”. This class will show the hunter what to do after the shot. This will be an in depth look at how to properly perform the following:
• Rifle caliber and bullet selection for a particular animal.
• Optics and other sighting options.
• What’s in your pack?
• External and terminal ballistics.
• Shot placement and animal anatomy.
• Necessary tools and equipment.
• Cooling and care of the meat.
• Preparing the meat for cooking.
10:30-11:00 Get the meat ready cooking
11:00-13:30 Range time for students who wish to shoot their hunting rifles.
All FIREARMS WILL BE PUT AWAY AT THIS TIME.
13:30-15:00 BBQ time. Sample all the different ways the meat was cooked.
15:00 course ends.
Supply’s needed by Students (what to bring):
Hunting rifle and equipment, 20- 40 rounds of ammo for your hunting rifle.
Eye and ear protection, sun screen, water, hat, lunch each day.
Prerequisites for Advanced Hunter Education:
This is an Advanced Hunter class. Students should possess a Hunting License or a Hunter Education Certification card and be familiar with hunting techniques.
During this class animals will be shot, killed and eaten. Students are expected to participate in some or all of this. Students need to bring a hunting rifle, at least 20 rounds of ammo and their hunting pack.

Bill Parmelee- Instructor Resume
Bill has been an avid hunter since the age of 12. He has hunted Doves, Quail, Chucker, Ducks, Geese, Turkey, Wild Boar, Deer, Antelope and Elk. He has been reloading his own ammo since the age of 19 when he started shooting competitively.
Bill also enjoys preparing and cooking the wild game he harvests. Bill loves to share his experiences with others. He taught both of his children to hunt and fish.
Bill has a passion for safe gun handling skills, precision shooting resulting in ethical kills. Being a good Sportsman and presenting one’s self as a great steward of our natural renewable resources is top on his list of things to promote to others. This is evident of his volunteer work with the Ca. Department of Fish and Wildlife. Bill is a certified Instructor in Hunter Education as well as a CCW Instructor.
Bill recently retired after 30 years at the Los Angeles Police Department. Bill has trained thousands of Police Officers in Rifle, Pistol and Shotgun. He was the team captain of the LAPD shooting team for several years where he lead the team to an unprecedented 4-Time World Championship Wins at the Solider of Fortune 3-Gun World Championships.
Bill is a certified Instructor in Rifle, Pistol and Shotgun. He has attended numerous schools in firearms training including FBI sniper school and LAPD sniper seminar USMC Camp Pendleton. Available spots:10.
